We enjoyed the savoury pancakes with a creamy Spinach and Cream Cheese filling, topped up with cheese sauce.
Spinach and Cream Cheese Pancakes with Cheese Sauce:
Ingredients:
- 1 onion
- 1 bag of spinach
- 2 spoons of cream cheese
- 1 small tub of single cream
- 3 spoons of cheddar cheese
Method:
Brown the sliced onions in a saucepan over medium heat. Add the spinach until it is cooked, add the cream cheese and cook for a few minutes. Removed the mixture from the heat and reserve.
In another saucepan, add the single cream and bring it to the boil. Add the cheddar cheese and season to taste. Reserve.
Warm up the pancakes by placing each one on a non-stick pan and warm on a medium heat for 60 seconds on each side.
Add a couple of spoonfuls of the spinach and cream cheese mixture to each pancake, roll it and top it up with the cheese sauce. Enjoy it warm!

Pancakes with Peach and Mango Compote:
Ingredients:
- 2 peaches
- 1 teaspoon of cinnamon
- 2 tablespoons of raisins
- 1 tablespoon of mango chutney
Method:
Slice the peaches in small squares and heat up the peaches, cinnamon and raisins in a saucepan over medium heat. Add a few spoons of water so it doesn’t burn.
Once the peaches are soft and a thick sauce has been created, take off the heat and add the mango chutney and stir.
Best served warm, enjoy!
The peaches and mango compote is sweet, but not too sweet as there is no sugar in the recipe.
