Healthy Spiced Rice Pudding Recipe with Peach & Mango Compote
I have a sweet tooth, I like having something sweet after meal times. I believe we should have what we enjoy, as long as it is in moderation.
As we are trying to be healthier in 2013, we are constantly looking at ways to make our food healthier while still keeping it tasty and enjoyable.
I love rice pudding, It is a comfort dessert, perfect for wintery evenings and cold days. It’s a hearty dish that reminds me of Brazil.
We have a lot of rice pudding in Brazil and my mum used to make it all the time. Her recipe is delicious, however it is not very waistline-friendly. It takes butter, cream, condensed milk and sugar.
In order to cut down the calorie content, I removed sugar from my rice pudding recipe while adding spices to give it a sweet flavour. I also added mango chutney to provide a twist and a touch of sweetness to the dish.
This is my favourite recipe with a healthy twist. You can still have a low sugar, low fat rice pudding without losing out on the creamy texture of the dessert.
Spiced Rice Pudding Recipe (serves 4)
Ingredients:
- 1 cup of pudding rice
- 5 cups of milk
- 1 teaspoon of ground cinnamon
- 1 cinnamon stick
- 1 teaspoon of cloves (around 10-12)
- 1 tablespoon of Geeta’s Premium Mango Chutney
Method:
Pour in 2 cups of milk and the pudding rice in a saucepan over medium heat. Add the ground cinnamon, cinnamon stick and cloves, and stir.
Bring the mixture to a simmer and stir it every few minutes. Add the remaining milk, one cup at the time, as needed.
Once the rice is soft and the mixture is thick, remove from the heat and stir in the mango chutney.
Best served warm with a dollop of mango chutney or peach & mango compote.
Peach & Mango Compote Recipe:
If you prefer your rice pudding with a twist, you will love this recipe. It is really simple and easy to make, yet it is full of flavour.
You only need a few ingredients, however it tastes divine!
Ingredients:
- 2 peaches
- 1 teaspoon of ground cinnamon
- 2 tablespoons of raisins
- 1 tablespoon of Geeta’s Premium Mango Chutney
Method:
Slice the peaches in small squares and heat up the peaches, cinnamon and raisins in a saucepan over medium heat.
Add a few tablespoons of water to the mixture so it doesn’t burn.
Once the peaches are soft and a thick sauce has been created, take off the heat.
Add the mango chutney and stir. Best served warm, enjoy!
The peach and mango compote is sweet, but not too sweet as there is no sugar in the recipe. It goes down really well with the rice pudding as it is fruity with a spicy twist.
Both dishes compliment each other, the different spices are well balanced and provide an explosion of flavour.
Besides, it is a healthy dish as it has no sugar and no butter, instead it has plenty fresh and dry fruit.
