Hello Fresh Box: Butterflied Mexican Chicken with Homemade Refried Beans Recipe
A couple of weeks ago, we received a Hello Fresh box for the first time. Hello Fresh creates delicious and nutritious recipes, you can choose what you would like and they pack all the ingredients in a box for you. The delivery is free and you will be provided with what you need to cook a great meal in 30 minutes or less.
We were sent a Classic Box with 3 meals for 2 people with everything we needed for the meals in the exact quantities, including meat, fish, herbs and species. Our first meal was “Tuscan Pork Linguini with Courgettes, Chilli and Lemon” and we really enjoyed it. Our second meal was a tasty Smoked Mackerel Summer Salad.
Our final recipe was:
Butterflied Mexican Chicken with Homemade Refried Beans
Serves 2, Ready in 30 minutes
Ingredients:
- 1 Hass Avocado
- 1 Lime
- 1 Tbsp Chipotle
- A Splash of Tabasco
- 2 Chicken Breasts
- ½ Cup Coriander
- 1 Red Onion
- 1 Tsp Ground Cumin
- 1 Tbsp Tomato Puree
- 1 Can Organic Mixed Beans
- 1 Yellow Pepper
- 1 Red Pepper
Method:
Pre-heat the oven to 220 degrees. Remove the core from the peppers and cut them into chunky slices, chop the coriander, finely dice the red onion. Drain and rinse the mixed beans.
Coat the peppers in a tsp of olive oil and a good pinch of salt and pepper. Put them in the oven and cook for about 20 minutes, until they are soft and a little crispy around the edges.
Set the hob to medium-low heat. Place non-stick pan on hob and add a tbsp of oil. After 5 minutes, add in the mixed beans, cumin, tomato puree, 5 tbsp of water and as much Tabasco as you dare. Season with ¼ tsp of salt and a pinch of pepper. Cook with a lid for 15 minutes.
Pre-heat the grill to high heat and move the pepper to the middle shelf. To butterfly the chicken: make a cut in the side of each breast, pull the sides apart until they lie flat, like an open book. Coat the chicken breast thoroughly in the chipotle, half the chopped coriander and the zest and juice of half the lime. Put the chicken on the top shelf directly under the grill. Cook on each side for around 6 minutes or until nicely browned off.
Now to make the refried beans: remove 2/3 of the bean mixture from the pan, mash up to a paste using the back of a fork. Mix the remaining whole beans into the paste and check for seasoning.
Cut lengthways into the avocado. When you reach the stone in the middle, turn your knife around the stone to cut the avocado into 2 neat halves. Pull the avocado apart, remove the stone and slide a knife around the flesh to release it from the skin.
To serve: Slice the chicken lengthways into strips and place it on top of the refried beans. Mix the roasted peppers with the avocado and serve it on the side.
Overall, we had a very pleasant Hello Fresh experience, it made cooking easier and more enjoyable by taking the pressure out of picking a recipe and going out shopping. It is very convenient having the products delivered directly to your door and arriving measured according to the recipe.
The Butterflied Mexican Chicken with Homemade Refried Beans was very tasty and hubby’s favourite meal. My favourite was the Smoked Mackerel Summer Salad, it was my first time trying smoked mackerel and I really liked it.
