Summer Chicken Caesar Salad

The long days and beautiful sunshine make it a perfect weather for a summer salad. A couple of days ago, I share a recipe of a Chicken and Sweet Potato Summer Salad Recipe, I like having tasty and light salads, especially in the summer.

Dick Strawbridge is a Rayburn ambassador and he shows how to make a perfect chicken for a salad using a Rayburn cooker.

The Rayburn is a British invention and all the castings are made in the Coalbrookdale foundry in Ironbridge, where they are proud of their history, having been at the birthplace of the industrial revolution. Every Rayburn is hand built in Shropshire by their master craftsmen and delivered to the home ready assembled for easy installation. By checking their website, I found out that 70% of every Rayburn is made from recycled materials.

In the video, Dick Strawbridge prepares a Chicken Caesar Salad with homemade croutons and chargrilled chicken. I should add that, although I love Caesar salad, I have never made one from scratch at home.

Dick makes it look very easy and straight forward in this video. He made the croutons by chopping stale bread and seasoning with garlic and thyme before popping them in the oven. It is a great idea to use up old bread instead of throwing it away. I will make sure to remember to make croutons next time I have stale bread at home.

The chicken breast was then seasoned with garlic, thyme and lemon. I liked how Dick added oil to the chicken instead of adding to the pan. I’ve never thought about it before, but I will be trying his technique.

Dick then made the dressing, put all the ingredients together and he had a perfect Chicken Caeasar Salad in no time, looked very tasty!
