Blueberry Muffins Recipe
Yakult is launching a new online Brighter Breakfast Selector, to bring some delicious, nutritious variety to your morning. The recipes aren’t all made with Yakult don’t panic! But they are each based on a nutrient that is designed to kick-start the day!
I have tried and the Brighter Breakfast Selector is very clever! You can get a recipe by simply selecting a nutrient, breakfast type (brunch, celebration, weekend, everyday and to go), then ingredients you fancy. The selector will then pick out one of the many recipes for you to try. You will also have access to the whole library of recipes so you can simply scroll through to find one you like.
I picked the nutrients to be A, D, E & K vitamins, breakfast type “to go” and ingredients “oats”, the Brighter Breakfast Selector suggested Blueberry Muffins for breakfast, yummy!
Blueberry Muffins Recipe (Makes 12)
This is an American classic. A good blueberry muffin is hard to beat, and you can make loads in a single batch to hand around, or keep in an airtight container for a few days.

Ingredients:
- 60g Butter
- 115g Caster sugar
- 2 Eggs
- 250g Plain flour
- 2 tsp Baking Powder
- 125ml Milk
- 150g Blueberries
- 25g Oats
- Pinch of Salt
Method:
- Cream together the butter and sugar until light and fluffy and then gradually add the eggs, beating between each addition until it is all incorporated.
- Next sift the flour, baking powder and salt and fold a third of it into the butter mixture.
- Add a third of the milk and then another third of the flour mixture.
- Repeat until all ingredients have been used up, and then carefully fold in the blueberries.
- Divide the mixture between 12 muffin cases and scatter the oats over them.
- Bake in a preheated oven at 180ºC for 25 minutes.
