How to Cook Tomato and Smoked Paprika Soup with Jo Pratt (Recipe)

As a busy mum, juggling full-time work and family, I know very well how hard it is sometimes to come up with a fresh family meal after a busy day at work. I always make sure we have plenty of vegetables in our diet and soups are a great way to have one of our five a day.

Jo Pratt, TV chef, has created tasty dishes using the new Panasonic combination microwave oven, they are simple and easy to make, yet healthy and delicious. One of her recipes is Tomato and Smoked Paprika Soup prepared in only 20 minutes.

Tomato and Smoked Paprika Soup

Ingredients:

  • 1 tbsp oil
  • 1 onion, chopped
  • 1 stick celery, chopped
  • 1 carrot, finely chopped
  • 1 tsp smoked paprika
  • 1 tbsp tomato puree
  • 1.25kg tomato, quartered with central core removed
  • 1 tbsp sugar
  • 2 pints vegetable stock

Jo Pratt started the dish by roughly chopping the vegetables, adding them to a large bowl with a touch of oil and seasoned with paprika. They were covered with cling film, then cooked in the Panasonic combination microwave for 5 minutes on high power.

After she added the fresh tomatoes, tomato puree, sugar and stock, then cooked the vegetable mixture on medium power for 15 minutes.

Once the soup cooled down, it was blended until smooth in a liquidiser. It was served with crème fraiche and basil leaves.

I loved the fact that Jo Pratt created quick and easy recipes only using a microwave. I usually use our microwave simply to heat up food, but I will be looking into incorporating it more into our busy family lifestyles.
