Smoked Salmon and Creme Fraiche Salad Recipe

Now that the festive period is well and truly over, life is back to normal and we are busy with our routine and commitments. Lots of people that I know are trying to be healthier this year, and lack of time is the most common problem for not eating healthy meals.

You don’t need half a day in the kitchen, you can actually make a healthy salad in minutes, ideal to be served as a light lunch or starter. Smoked salmon goes very well with cream cheese, but instead you can use crème fraiche to cut down the calories and stick with healthy eating in the New Year.

Smoked Salmon and Creme Fraiche Salad Recipe

Ingredients:

  • 100g Smoked Salmon
  • 3 Tablespoons of Weight Watchers Creme Fraiche
  • Small Packet of Rocket Leaves
  • 1 Lemon
  • Dill
  • Salt and Pepper to Taste

Method:

Spread Weight Watchers Creme Fraiche on each slice of smoked salmon and sprinkle with dill. Roll each slice of smoked salmon.

Place the rocket leaves in the middle of the plate. Make a dressing by adding 2 spoons of Weight Watchers Creme Fraiche to dill, juice of one lemon, salt and pepper to taste. Dress the salad and drizzle the dressing around the plate.
