Breadless Mushroom & Bacon Pizza Recipe
Pizza is one of those dishes we could eat every day, different toppings of course, perhaps Margherita on Mondays, Four Cheeses on Tuesdays, Hawaiian on Wednesdays and so on. Although pizzas are tasty, they are not one of the healthiest meals out there, so we try and find alternative ways to make healthy pizzas at home.
Instead of using a pizza base, you could use an egg base for your pizza, similar to an omelette, then add your favourite toppings, virtually anything you fancy and grated cheese on top. It is a great recipe to make whenever you don’t have much time and want to use up leftovers from the fridge.
Besides, eggs are naturally packed with vitamins and minerals, so you can feel satisfied that your family will be getting benefits from protein to vitamin D and B vitamins.
Breadless Mushroom & Bacon Pizza Recipe (Serves 4)
Ingredients:
- 6 eggs
- 1 tbsp olive oil
- 100 ml of milk
- 2 small onions (1 large), diced
- 100g mushroom, sliced
- 6 slices bacon, diced
- 5 tbsp passata sauce
- 100g cheddar cheese, grated
- Salt and pepper to taste
- Oregano to taste
Method:
Beat eggs with the milk, oregano, salt and pepper.
Heat up the olive oil in a frying pan over medium heat and pour the mixture. Cook until the eggs are nearly set. Place under the grill until the mixture has risen.
In the meanwhile, sautee the onions for a couple of minutes, add the bacon and mushroom, cook for a further 2-3 minutes. Reserve.
Remove the egg mixture under the grill, spread the passata sauce over the base, add the toppings (onions, bacon and mushroom in this case), sprinkle cheddar cheese and oregano on top.
Place under the grill for a few minutes until the cheese has melted. Enjoy!
Our Breadless Mushroom and Bacon Pizza was a success and the whole family enjoyed it. It was very tasty and it looked just like a normal pizza, but so much healthier.
