Recipe: American Style Banana Pancake Stack filled with Warm Chocolate Dipping Sauce

We love experimenting with pancakes, from making a colourful Pancake Rainbow to Easy Pancake Recipes. Pancakes are great for breakfast and as a sweet treat, our favourite is American style pancakes, thick and fluffy!

Our new favourite recipe is American Style Banana Stack filled with warm chocolate dipping sauce.  It has the best of both worlds, fluffy pancakes and chocolate fondue.

I usually add sugar to my pancakes, but this recipe has no sugar, it uses a banana instead. It is served with raspberry and blueberry, so surely it counts as 1 of my 5 a day.

For the pancakes
  1. 1 medium banana
  2. 125g self-raising flour
  3. 1 medium egg
  4. 300ml skimmed milk
For the chocolate sauce
  1. 40g plain chocolate
  2. 90ml double cream (we used Weight Watchers West Country Thick Cream)
To serve
  1. Fresh raspberries
  2. Fresh blueberries
  3. Mini marshmallows
  4. Icing sugar to garnish
Instructions
  1. Make the pancake batter by blending the banana in a food processor. Add the egg and sifted flour. Mix well. Gradually add the milk while blending until you have a smooth batter.
  2. Using a tablespoon measure, make 32 small, thick pancakes in a hot pan using low fat cooking spray.
  3. Melt the chocolate in a bowl over hot water. Gradually add the double cream, mixing well to make a thick dipping sauce.
  4. Stack 8 pancakes per serving onto each plate. Using a small round cutter, cut through the centre of the stack to make a ‘well’.
  5. Fill each ‘well’ with warm chocolate dipping sauce.
  6. Thread raspberries, blueberries and mini marshmallows onto cocktail sticks. Make 4 sticks per portion for dipping into the sauce. Arrange on the serving plate with the spare disks of pancake cut from the centre of the stack.
  7. Sprinkle with a light dusting of icing sugar to finish.

The whole family enjoyed the American Style pancakes and we will be making more again soon. It is a perfect recipe to use up any leftover Easter eggs you might have in the house. I’m actually thinking of adding chocolate chunks to the pancake mix next time – yum!

The warm chocolate dipping sauce was made with Weight Watchers West Country Extra Thick Cream, which contains 70% fat than standard cream and only 34 calories per 30g serving.  You can’t even tell it is low-calorie, it tastes just like normal cream. It is available from most major supermarkets.
