Chocolate Coca-Cola Cake Recipe

When I first heard of Chocolate Cola Cake, I wasn’t sure what it would taste like. I asked my sister-in-law if she’s ever had it before, she mentioned she didn’t have a pleasant experience. However I am adventurous and enjoy trying new recipes, so I decided to give it a go. I love chocolate and coke, so surely the combination couldn’t go wrong…

Once the cake was ready, we were all pleasantly surprised how moist and tasty it was. Such a beautiful chocolate cake, we will definitely be making this recipe again soon!

Chocolate Coca-Cola Cake Recipe

For the cake
  1. 250g self-raising flour
  2. 300g golden caster sugar
  3. 3 heaped tbsp cocoa
  4. generous pinch bicarbonate of soda
  5. 250g butter
  6. 250ml Coca-Cola
  7. 125ml milk
  8. 2 eggs, beaten
  9. 1 tsp vanilla extract
For the topping
  1. 100g butter
  2. 2 tbsp Coca-Cola
  3. 2 tbsp cocoa powder
  4. 200g icing sugar
Instructions
  1. Pre-heat the oven to 180C/350F/Gas 4.
  2. Sift the dry ingredients, flour, sugar, cocoa and bicarbonate of soda into a bowl.
  3. Melt the butter and cola drink gently in a pan then add to the dry ingredients, together with the milk, eggs and vanilla.
  4. Mix gently but thoroughly and tip into a buttered, loose based cake tin (24cm/9½ in diameter).
  5. Bake for about 40 minutes or until a skewer inserted into the centre of the cake comes out clean. Remove from the oven and leave for about 15 minutes while you make the topping.
For the topping
  1. Put the butter into a pan and melt slowly over low heat, do not let it boil or it could split.
  2. Once melted, add the cola drink and cocoa and mix.
  3. Pour the mixture onto the icing sugar, beat until smooth and pour over the cake while still warm.
  4. Cool the cake in the tin and remove from the tin once the topping has set.
