Quick and Tasty Family Meal: Prawn and Courgette Linguine Recipe
As a busy family, we don’t have much time to prepare our meals, mummy and daddy are at work during the week while little man is at school, then on weekends we juggle several different activities.
We are always looking for inspiration and recipes that we can rustle up in a few minutes when we get home. We are usually starving by the time we get home, so we love quick and tasty dishes using fresh ingredients.
There is a range of quick and tasty recipes on Heinz Salad Cream website, including tarts, bagels, burgers, sandwiches or pastas. We’ve tried Prawn and Courgette Linguine using Heinz Salad Cream, it was easy to make and full of flavour.
I don’t usually cook with salad cream, it was a nice surprise to find the recipes. The whole family enjoyed the linguine, the white wine sauce with salad cream complemented the prawns nicely. We will be making Prawn and Courgette Linguine again soon!
Here is the recipe we used:
- 400g dried linguine pasta
- 1 tbsp extra virgin olive
- 1 medium red onion, finely chopped
- ½ -1 deseeded red chilli, finely chopped
- 2 large garlic cloves, finely chopped
- 1 medium courgette, grated
- 150ml dry white wine
- 4 tbsp Heinz Salad Cream
- 150ml half fat crème fraiche
- 150g baby leaf spinach
- 250g cooked and peeled prawns
- Salt and pepper to taste
- Cook the pasta according to pack instructions
- Meanwhile add the oil to a deep non stick frying pan and fry the onion for 2 minutes
- Stir in the chilli, garlic and courgette and cook for a further 2 minutes, stirring occasionally
- Add in the wine and simmer until reduced by half
- Stir in Heinz Salad Cream with the crème fraiche, baby leaf spinach and prawns, salt and pepper to taste. Cook until the prawns have warmed through and the spinach is wilted
- Add the drained linguine to the pan, mix well and season
- Serve immediately with lemon wedges and garlic bread
