#Amoyzing Summer BBQ: Marinated Chicken and Prawn
When I think of Chinese food, usually egg fried rice comes to mind, I particularly enjoyed learning to make egg fried rice with Hannah Hayes at the Amoy Cookery Challenge last year.
I was recently sent a selection of Amoy products and challenged to create delicious BBQ recipes. We love summer BBQs and we love Chinese food, but we have never thought about enjoying them together.
We fancies chicken drumsticks and prawns in our BBQ, half of the chicken was marinated in Chinese barbecue sticky glaze, and the other half in peanut satay stir fry sauce.
We then marinated prawn in soy sauce with Cajun spices, and put the BBQ on. Simple as that!
While the meat was cooking, we made a mixed vegetable dish, mushroom and courgette skewers to be cooked in the BBQ, and also sweet potato wrapped in foil, also to be cooked in the BBQ.
Our meal was enjoyed with mixed leaves salad, and it was simple, yet full of flavour.
The chicken drumsticks marinated in Chinese barbecue sticky glaze was delicious. The sticky glaze is made with a blend of soy sauce, fresh onions and garlic, which added a lovely flavour to the chicken.
The chicken drumstick with peanut satay stir fry sauce was equally tasty. The sauce is made with a blend of roasted peanuts and grounded spices, yummy!
The praws marinated in soy sauce and cajun spices were seasoned to perfection. We used mainly dark soy sauce, with a touch of light soy sauce for full flavour. The prawns were juicy and beautifully cooked.
We really enjoyed our Chinese themed summer BBQ, it was Amoyzing!
