Lactofree Summer Smoothie Challenge
I love smoothie, it is a delicious way of eating more fruit and vegetables, making it easier to consume your 5 a day.
I was invited by Lactofree, the UK’s leading lactose free dairy range, to take part in the Summer Smoothie Challenge, as the perfect way for me to Say Yes to Summer.
Being lactose intolerant, I haven’t had cows’ milk in a few years, but it doesn’t mean that I can’t enjoy smoothie – I can simply use Lactofree, instead of milk.
I have been trying a few different types of smoothie lately, to try and decide which one is my favourite.
I really enjoyed Strawberry, Raspberry, Blueberry and Carrot Smoothie, made by blending handfuls of strawberry, raspberry and blueberry, with carrot sticks and a cup of Lactofree. It was berry-licious, the carrots blended in nicely, adding a sweet touch to the smoothie.
Little man has also been making smoothie ice lollies, he made a Rainbow Smoothie Ice Lollies (recipe with video tutorial) with fruit smoothie and no added sugar.
He blended strawberries, raspberries and banana to Lactofree for the first half of the lollies, then banana with Lactofree and blueberries for the second half of the ice lolly.
The fruits are so sweet, that you don’t need any sugar. It is a great healthy treat this summer!
I also made a very tasty Apple, Pears, Kiwi Lactofree Smoothie. I prefer thick smoothie, so I added one cup of Lactofree for one whole apple, one pear and two kiwis. The smoothie was very refreshing and fruity!
I used South African apples and pears, in season from February to October, and widely available in British supermarkets. They grow mainly in the Western Cape of South Africa, and you can find Granny Smith, Cripp’s Pink, Royal Gala. South African Pears are grown in the same area, and are equally delicious!
Last but not least, my favourite smoothie was Frozen Avocado, Banana & Raisins Smoothie, a variation of a smoothie that my dad used to make daily during my childhood. He would blend avocado and banana with milk, and I loved waking up to avocado smoothie each morning.
My Frozen Avocado, Banana and Raisins Smoothie contains a handful of raisins, a cup of Lactofree, a handful of ice cubes, one banana and one avocado from Peru. Avocados are very healthy, full of monounsaturated fatty acids, and they contain 11 of the 13 known vitamins and minerals, including high levels of vitamin A, C and K, antioxidants and folic acid.
I added raisins to give a sweet touch to the smoothie and ice to make it very thick. It has the same consistency as frozen yogurt. It is delicious and very healthy!
I really enjoyed taking part in Lactofree Summer Smoothie Challenge, it helped us include more fruit and veg in our diet. We have now started to experiment with vegetables in our smoothies. Smoothie is delicious in the morning and in the afternoon – or whenever you want a a refreshing drink!
