Healthy Vegetarian English Breakfast on Homemade Pancake Recipe
We always look forward to a cooked breakfast on weekends, we usually have pancakes or English breakfast. However I decided to put together our favourite breakfast and create ‘English Breakfast on Pancake’.
JML sent us a Regis Stone pan to take part in Regis Stone Non-Stick Breakfast Challenge, where we would create a beautiful, healthy breakfast for our family using the pan.
The recently launched Regis Stone is a revolutionary new pan with non-stick coating to eliminate oils or fats, as well as hybrid stone coating that helps conduct heat much faster than regular pans. They are available in 20cm, 24cm and 28cm, from £19.99.
They can be used on gas, induction, electric and ceramic hobs. The heavy-duty 4mm thick pans are scratch resistant, and decorated with a rustic speckled finish.
We already use non-stick pans, but I found it is impossible to make pancakes without oil, I usually add a knob of butter for the first pancanke, then a little butter every 4 to 5 pancakes. I was delighted to find out that we can now make pancakes with no oil at all using our new Regis Stone pan. Hubby was very impressed too!
Our English Breakfast on pancake was made using on the Regis Stone pan. First I make the pancakes, then cooked hash browns and meat-free sausages, I used Quorn sausages as I was trying to achieve an extra healthy breakfast. Once they were ready, tomato halves and sliced mushroom was cooked, then finally the eggs.
Everything was beautifully cooked with no oil, however the eggs stick a little to the bottom of the pan. Next time I will add a little oil when making fried eggs, but I am glad it is significantly healthier than traditional fried English breakfast.
The whole family enjoyed our healthy vegetarian English breakfast on pancake, and we will be making it again soon!
