Panettone Bread and Butter Pudding Recipe

Bread and butter pudding is one of my favourite recipes, it is very easy to make and it can be done with everyday ingredients.

I’ve recently made a Bread and Butter pudding recipe with brown bread and even tried a Pain au chocolat bread and butter pudding recipe. They were both delicious and a success with the whole family.

I was sent a new bread and butter recipe from Sunrise Senior Living and decided to give it a try. I am aware there will be lots of panettone being enjoyed during the festive season, so thought it would be a good recipe to use up any leftover panettone.

Recently, I have been getting into the Christmas spirit by learning how to make panettone, so I replaced the white bread with slices of panettone. It was simply delicious and I will be definitely making it again during the festive period.

Ingredients
  1. 6 slices of panettone
  2. 30g salted butter
  3. 15g currants
  4. 60ml semi-skimmed milk
  5. 20ml double cream
  6. 20g caster sugar
  7. ¼ lemon (zested)
  8. 2 eggs
  9. Pinch of cinnamon
  10. Vanilla extract, to taste
  11. 20g brown sugar
  12. Pinch of ground nutmeg
  13. 150ml vanilla custard (optional)
Instructions
  1. Preheat oven to 180C/fan 160C/gas mark 4 and butter the baking dish.
  2. Butter the panettone, cut the crusts off and arrange a layer at the bottom of the prepared baking dish. Top with half of the currants.
  3. Repeat Step 2 until the slices of panettone and currants have been used.
  4. In a separate bowl cream together the eggs with the sugar until pale yellow, then add the milk, double cream, lemon zest, vanilla extract and cinnamon.
  5. Pour the mix over the panettone making, ensuring all of the panettone is covered.
  6. Sprinkle with nutmeg and brown sugar.
  7. Bake for 30-40 minutes until golden brown.
  8. Serve with vanilla custard.
