Parsnip Soup with Pigs in Blankets Recipe

We had a wonderful Christmas dinner, and enjoy lots of great food. We had a delicious soup as starter with homemade bread from my new breadmaker, followed by a traditional Christmas dinner with turkey, pigs in blankets, Brussel sprouts with bacon, roasted potatoes, roasted parsnips and mixed vegetables.

I loved spending quality time with our family, the meal was beautifully cooked and full of flavour. I enjoyed every mouthful, but there were loads of Christmas food left after dinner.

I enjoy soups in the winter, they are perfect to warm you up after a busy day, especially after indulging in sweets, chocolates and snacks at Christmas. I was sent a Morphy Richard soup maker by Legal & General and challenged to create a healthy soup recipe to promote healthy living over the Christmas period.

The soup maker is very easy to use, the stainless steel 1.6l jug comes with serrator blade to quickly blend the ingredients. You can make your favourite flavour combinations by simply adding raw vegetables, placing the lid and choosing your favourite consistency by selecting smooth or chunky setting.

The smooth programme blends and gently cooks soup in just 21 minutes, while the chunky programme cooks wholesome soup with a thicker consistency in 28 minutes. There is a handy LED countdown display so you can keep track when your soup will be ready. 

If your soup is a little too chunky for your liking, just press the blend button until the texture of the soup is to your taste. I was surprised to find out that the soup maker can also make healthy smoothies and fruit juices in just two minutes with the juice function.

The soup maker is very convenient and perfect for quick meals. I was planning on adding turkey to the soup, but it was used to make Moroccan Turkey Stew instead. Instead, I used up the pigs in blankets in the fridge.

Ingredients
  1. 1 onion, chopped
  2. 1 garlic clove, chopped
  3. 4 parsnips, chopped
  4. 1 potato, chopped
  5. 1 pint vegetable stock
  6. Rosemary, to taste
  7. Salt and pepper, to taste
  8. Pigs in blankets, sliced
Using soup maker
  1. Add the ingredients to the Morphy Richards soup maker, choose the smooth setting and enjoy the soup in 21 minutes.
  2. Serve soup into bowls and add sliced pigs in blankets.
In case you don’t have a soup maker
  1. Sautee the onions and garlic in a saucepan with little oil, then add the parsnips, potato, rosemary, and fry for around 3-5 minutes.
  2. Add the stock, bring to boil and simmer on medium heat until the vegetables are cooked.
  3. Blend and serve warm with sliced pigs in blankets.
