Peanut Butter and Banana Weetabix Breakfast Bar Recipe

In my opinion, breakfast is the most important meal of the day. I must eat a nutritious meal as soon as I wake up so I am ready for the busy day ahead.

As you are aware, we have been taking part in the Whole Wheat Fibre Challenge with Weetabix, trying to include more fibre in our diet. Apart from eating Weetabix for breakfast and other high fibre foods, I also tried to bake with Weetabix and was delighted with the results!

I made a delicious and nutritious peanut butter and banana Weetabix breakfast bar, which is perfect as breakfast on the go, when you don’t have time to sit down for breakfast, and as a quick snack during the day.

It is very easy to make and can be made in advance, so you can simply enjoy it when you want to. It was also a success with little man and hubby, they loved the peanut butter and banana flavour combination.

Ingredients
  1. 1 cup of Weetabix (3 biscuits), crushed
  2. 1 cup of oats
  3. 2 tbsp golden syrup
  4. 1 tbsp butter
  5. 2 tbsp crunchy peanut butter
  6. 3 bananas, mashed
Instructions
  1. Heat oven to 160C/ 140C fan/ gas mark 3. Grease and line a 20cm square tin with baking parchment.
  2. Heat the peanut butter, butter and golden syrup in a pan until melted. Tip the mixture into a large bowl.
  3. Add the mashed banana, oats and Weetabix. Mix well until the mixture is evenly coated.
  4. Tip the mixture into the tin and level the surface.
  5. Bake for around 30 minutes, until golden. Cut into 8 pieces and store in an airtight container.
Notes
  1. If you want, you can add raisins, dried fruit and seeds to the recipe.
