Homemade Granola Recipe with Florida Grapefruit

A few weeks ago, I’ve decided to make small changes to my lifestyle, by becoming more active and eating more healthy food. I have since started running and I am now able to do a 5k run. I have also introduced more fruit and vegetables to my diet, and I am trying to drink more water.

In the past few days, I’ve been enjoying a healthy and nutritious breakfast of homemade granola with Florida grapefruit. I was introduced to Florida grapefruit last year in a cooking demonstration with Liz McClarnon, and I was pleased to find out the peak season sweetness and juiciness starts in January.

Furthermore, Florida grapefruit is rich in vitamin C, essential to help support a healthy immune system, especially at this time of the year. Half of a grapefruit contains at least 100 per cent of the recommended daily amount of vitamin C. It is also a source of vitamin A, fibre and potassium.

I added Florida grapefruit to homemade granola and natural yogurt for a delicious and nutritious breakfast.

I started by laying slices of Florida grapefruit to the bottom of a glass, then sprinkling granola and a spoonful of yogurt, I then repeated the layers of grapefruit, granola and yogurt.

It was my first time making granola, and I loved it. I didn’t know it was so easy to make and the result was delicious. The whole family enjoyed granola with Florida grapefruit, it was a success!

This is the recipe I followed:

Granola
  1. 2 tbsp vegetable oil
  2. 125ml maple syrup
  3. 2 tbsp runny honey
  4. 1 tsp vanilla extract
  5. 250g rolled oats
  6. 50g sunflower seeds
  7. 4 tbsp sesame seeds
  8. 50g pumpkin seeds
  9. 100g flaked almonds
  10. 25g dried cranberries
  11. 25g dried cherries
  12. 50g chopped figs and apricots
  13. 50g coconut flakes
Topping
  1. 1 Florida grapefruit
  2. 150g natural, low-fat yogurt
  3. 2 tbsp manuka honey
Instructions
  1. Pre-heat the oven to 160C. Make the granola by combining the maple syrup, honey, vanilla extract and vegetable oil in a big bowl.
  2. Add in the rolled oats, add the seeds and nuts. Combine well and lay evenly onto a large non-stick tray or tray that has been lined with non-stick parchment.
  3. Bake the granola for 15 minutes.
  4. Remove from the oven and mix the remaining berries and flaked coconut. Bake for a further 15 minutes.
  5. Remove from the oven and leave to cook.
  6. Store in an airtight container, for up to one month.
Serving suggestions
  1. Mix the natural yogurt with manuka honey. Divide the Florida grapefruit and lay in the bottom of the glass. Sprinkle over some granola and a spoonful of the honey flavoured yogurt.
  2. Repeat the process for a couple of times to create some layers.
