Budget-Friendly Recipe Ideas: Treat Your Valentine to a Two-Course Meal
Valentine’s Day will be here soon, and there is nothing better than spending a cosy night in with your loved ones. We usually have a relaxing evening, which starts with a delicious meal together, followed by a movie.
This year I was challenged by Aldi to come up with a Valentine’s Day meal for £10, highlighting that you can spend a little, but love a lot.
Following our successful first visit to Aldi a few weeks ago, in which we learnt that it is possible to shop for healthy food on a budget, I was looking forward to visiting Aldi again.
When I arrived at the store, I noticed the gorgeous selection of flowers and red roses on display. You will also find beautiful cards, bubbly drinks and lovely gifts in the Valentine’s Day section, perfect to spoil your loved ones.
The food was so affordable at Aldi, that I managed to create a two-course meal for only a tenner. I prepared warm goat cheese salad for starters, which cost £4.03 for 2 people, £2.01 per person.
You will find goat cheese for £1.49, spinach for £1.59 and mixed peppers for 95p. There is lots of spinach and peppers left, so we will making another salad soon.
The warm goat cheese salad with roasted red peppers was served with baby spinach and drizzled with balsamic reduction. It was simply delicious!
The main course for 2 people came to £6.06, which is £3.03 per person.
You will find Specially selected Scottish, loch-reared salmon fillets for 2.99, coriander for 89p, spring onions for 44p, baby potatoes for 89p, baby leaf salad for 85p.
For main course, I cooked a delicious Scottish salmon from the Specially Selected range, which has been lightly smoked over woodchips and comes with a pouch of delicate honey mustard sauce.
Scottish salmon was baked in honey mustard sauce, and served in a bed of baby leaf salad with heart-shaped crushed potatoes seasoned with coriander and spring onions. The honey mustard sauce was delicious and complemented the flavours of the salmon and crushed potatoes.
Although I reached my budget for the Valentine’s Day meal, I couldn’t resist picking up a dessert. How can you say no to sticky toffee pudding for two at only £1.25?! It is the perfect ending to a gorgeous meal.
