Healthy Pancake Day Recipes: Blueberry & Chocolate Protein Pancake and American-Style Protein Pancake
Pancake is by far one of our favourite family weekend breakfasts. I have mentioned several times that I grew up enjoying pancakes in Brazil, so having pancakes always feels special and reminds me of my childhood.
Throughout the years, I have tried several different pancake recipes. We love experimenting with pancakes, from making a colourful Pancake Rainbow to Easy Pancake Recipes and even Vegetarian English Breakfast on Pancakes.
I usually follow my very own Perfect Pancake Recipe, but I have recently tried a new American Pancakes recipes and we all loved it. They are thick and fluffy, the pancakes bubble and rise a little in the pan.
As you are aware, I am trying to make small changes to my diet and lifestyle, in order to get more active and eat more healthily, and I have been sharing my progress on our Getting Fit feature. I still have treats and believe that it does you good to eat a little bit of what you fancy.
Since I’m trying to include more protein in my diet, I thought it would be a good idea to experiment with protein pancakes. I made two different recipes, a blueberry protein pancake and American-style protein pancake.
They were both made without any sugar or flour. Instead I’ve used oat flour, which is basically blended rolled oats, and Lactofree milk. I’ve added chocolate flavoured whey protein to both recipes, hence the chocolate colour.
- 200g blueberry
- 100g chocolate whey protein
- 100g oat
- 200ml Lactofree milk
- 1 egg
- 1 tsp vanilla extract
- Little oil for cooking
- Start by blending the oats to make oat flour. In a mixing bowl, mix the whey protein, egg, milk and vanilla extract to the oat flour, and combine well.
- Add half of the blueberries to the mixture, mixing well to crush the blueberries so they can blend in the recipe and sweeten the mixture.
- Heat a frying pan and add a little oil. Once it's hot, drop ladles of the mix onto the pan. Once they are bubbly on the top and the edges appear dry (after about 2 minutes), it’s time to turn them.
- Cook for a further 2 mins. Serve immediately with fresh blueberries.
The blueberry and chocolate protein pancake was delicious and fruity, but my favourite has to be the American-style protein pancake.
It was served with my favourite topping of peanut butter and banana. Yummy! Hubby said he really enjoyed it and he couldn’t even tell it was a healthy pancake.

- 75g oat flour (blended oats)
- 100g oats
- 400ml Lactofree milk
- 1 tbsp baking powder
- 1 egg
- 1 tsp vanilla extract
- Little oil for cooking
- Start by blending the oats to make oat flour. In a mixing bowl, mix the whey protein, oats, egg, baking powder, milk and vanilla extract to the oat flour, and combine well.
- Heat a frying pan and add a little oil. Once it's hot, drop ladles of the mix onto the pan. Once they are bubbly on the top and the edges appear dry (after about 2 minutes), it’s time to turn them.
- Cook for a further 2 mins. Serve immediately with your favourite toppings.
