Aromatic Ginger and Lemongrass Thai Beef Curry Recipe

We love a good old homemade curry, especially Thai curry. They are full of flavour and delicious, due to the wonderful combination of fresh ingredients and spices. We usually have Thai chicken curry, however we decided to try with beef instead.

Knorr Flavour Pots are convenient pots which capture the flavour and intense aroma of fresh herbs and spices, they are ideal to enhance mealtimes.

We have used Knorr Flavour Pots several times and we were not surprised when we heard that they have just collected first prize in the Sauce & Seasoning category for this year’s Product of the Year awards.

The range features nine different tantalising flavours, including Mixed Herbs, Three Peppercorn, Curry, Garlic, Mixed Chillies, Garden Herbs, Ginger & Lemongrass, Paprika, and Mexican.

In order to celebrate the achievement, we were invited to take part in the Knorr Flavour Pot – Product of the Year challenge, by incorporating Knorr Flavour Pots into our most creative home cooked dish.

A good curries needs lots of flavour and spices, but luckily they are so much easier to make by adding flavour pots. We used two flavour pots in the recipe, Ginger and Lemongrass Knorr Flavour Pot and Garlic Knorr Flavour Pot. Each pack comes with a handy recipe leaflet, in case you need inspiration at mealtimes.

Ingredients
  1. 1 tbsp olive oil
  2. 500g lean beef steak, diced
  3. 1 onion, diced
  4. 1 Knorr Ginger and Lemongrass Flavour Pot
  5. 1 Knorr Garlic Flavour Pot
  6. 1 Knorr Beef Stock
  7. ¼ Butternut squash, diced
  8. 1 green pepper, sliced
  9. 1 yellow pepper, sliced
  10. 2 stalks celery, diced
  11. 200g mushroom, sliced
  12. 1 can of coconut milk
  13. Bunch of coriander
Instructions
  1. Heat the olive oil in a wok, add the onions and cook for 2-3 minutes, until softened. Add the beef and fry for around 5 minutes, until browned.
  2. Add the butternut squash and cook for a few minutes until softened. Add the green pepper, yellow pepper, celery and cook for another 3 minutes.
  3. Pour over the coconut milk, ginger and lemongrass flavour pot, garlic flavour pot and beef stock. Bring it to a gentle simmer, until all the ingredients are cooked.
  4. To serve, finish with a few springs of coriander and serve immediately.
