Minions Pancakes and Minions Cupcakes #greengiantminions
As you may have seen in our Instagram feed, last week, little man and I had the pleasure of attending the premiere of the brand new Minions movie and absolutely loved the whole experience.
Walking the yellow carpet was very special, and we had the opportunity of watching the movie two weeks before its release.
The new Minions movie hits cinemas next Friday, 26th June. It shares the adventures of Stuart, Bob and Kevin as they search for a new evil master to serve. We loved the epic journey and we can’t wait to watch it again once it is released.
In order to celebrate the new Minions movie, our favourite sweetcorn brand Green Giant has challenged us to create the ultimate Minion-inspired summer snack.
We love sweetcorn, it is often eaten as a side vegetable, added to recipes, such as pasta, salad and pizza, and now we found out it is also a perfect addition to sweet recipes. Not only Green Giant sweetcorn is healthy and nutritious, it is also naturally sweet.
Our family has two favourite snacks: pancakes and cupcakes, so we thought it would be a good idea to add some delicious sweetcorn to our snacks. We were pleasantly surprised with the results, both creations looked as yellow as Minions are meant to be, and they tasted delicious too!
Minions Pancakes/ Minions Cupcakes
Makes 8 small pancakes or 6 cupcakes
Ingredients:
- 200g can Green Giant sweetcorn, drained
- 30g plain flour
- 1 tsp baking powder
- 1 egg
- 2 tbsp honey
- Pinch of salt
- Little oil for frying
Method for Pancakes:
- Put all the ingredients in a blender, until smooth.
- Heat a little oil in a large frying pan and drop in a spoonful of the batter. Cook for around 1-2 minutes in batches of 5 pancakes at the time. Turn the pancakes and cook for another minute or two, until golden.
- Repeat until the batter finishes.
- Once the pancakes cool down, decorate with a black icing pen.
Method for Cupcakes:
To make the cupcakes, I used exactly the same ingredients as the ones used for the Minions pancakes. However instead of frying the batter, it was spooned into cupcake cases, and baked in the oven for 12-15 minutes at 180C, or until golden.
Little man is already a fan of sweetcorn, but he loved even more eating it in the pancakes and cupcakes. Since 80g of sweetcorn counts as one of your five recommended daily servings of fruit and vegetables, I assume two pancakes count as one of your five-a-day! What a fun way to get little ones to eat more vegetables!
