Breadless Lunch Recipe Idea: BBQ Turkey Couscous with Mediterranean Roasted Vegetables
Although sandwiches are quick and easy to make, there are only so many slices, wraps and pittas someone can have. I must confess I prefer a hot lunch any day of the week, and I usually warm up my food at work before eating it.
When I heard about the Breadless Lunch Challenge, I was keen to get involved and share one of my favourite lunches: BBQ Turkey Couscous with Mediterranean Roasted Vegetables.
It can be eaten hot or cold. I love the fact it can be prepared in advance, and stored in the fridge until you need. I usually make a big batch of couscous and vegetables on Sunday, and add different meat and salad each day, just before eating.
I like adding Bernard Matthews chunks, as they are convenient and tasty, low in fat and contain no artificial colours or flavours.
The turkey breast chunks, made with 100% British turkey breast, are available in a range of flavours: roast turkey, tikka turkey, hickory BBQ turkey and sweet chilli turkey.
BBQ Turkey Couscous with Mediterranean Roasted Vegetables (Serves 2)
Ingredients:
- 1 red onion
- 1 red pepper
- 1 yellow pepper
- 1 small courgette
- 100g button mushrooms
- Handful of rosemary
- Handful of thyme
- 1 tbsp olive oil
- Salt and pepper, to taste
- 1 cup couscous
- 400ml vegetable stock
- 1 pack of mixed salad leaves
- 2 packs of Bernard Matthews Hickory BBQ Turkey Breast Chunks
Method:
- Pre-heat the oven to 2000C/ 1800C fan.
- Chop the vegetables into half inch chunks. Put the vegetables in a large roasting tray, scatter the herbs over the veg and drizzle the olive oil. Season to taste. Roast the vegetables until soft, golden and cooked through.
- Put the couscous in a bowl, pour over the hot vegetable stock, cover with cling film and leave to stand for 10 minutes.
- Fluff the couscous up with a fork, add the roasted vegetables, salad leaves and turkey chunks.
