Spiced Vanilla Chai Latte with Manuka Honey

I must confess I love a hot cup of tea, especially if it comes with lots of spices. My favourite tea is chai latte, it is just so full of flavour and comforting. I enjoy it all year round, but it is particularly welcome in a cold evening, after a busy day at work, while putting my feet up on the sofa with a cosy blanket – that’s my idea of a perfect night in!

I like the sweetness of the chai latte, which complements the spices of the drink. In my chai latte, I usually add cloves, cinnamon stick, ground cinnamon and a few drops of vanilla extract. For the sweet finish, I stir in a spoonful of Manuka honey. Simple and easy to make, but so delicious.

My latest chai latte was made using Rowse Manuka honey, produced in New Zealand by the bees foraging on the Manuka bush. Rowse uses the NPA grading system to measure the purity and concentration of their authentic Manuka honey.

The 15+ Manuka honey I tried is the most concentrated and pure Manuka honey from the range. It is thick, fairly strong in strength, with a strong and intense flavour, but not overpowering. Not only it is perfect to sweeten a chai latte and other hot drinks, it is also ideal to drizzle over fresh fruit or a hot bowl of porridge.

I’ve been making a few chai lattes lately, so hubby is now really into to it. This is my recipe to make two delicious cups of spiced hot chai latte.

Spiced Vanilla Chai Latte

Ingredients
  1. 400ml water
  2. 200ml milk
  3. 3 tbsp black tea (or 3 tea bags)
  4. 10 whole cloves
  5. 2 cinnamon sticks
  6. 1/2 tsp ground vanilla pods
  7. Pinch of nutmeg
  8. 2 tsp Rowse Manuka honey
  9. Pinch of ground cinnamon
Instructions
  1. Add water, milk, cloves, cinnamon stick, nutmeg and vanilla to a small pan on medium heat. Bring to a boil and simmer for 10 minutes on low heat.
  2. Add the black tea and simmer for another 3 minutes.
  3. Remove from the heat, stir in the Manuka honey.
  4. Strain and serve with a sprinkle of ground cinnamon.
