Healthy Lunch Idea: Vietnamese Supergreen Soup

Hands up if you enjoyed the festive season and had one too many mince pies like me? I must confess I had far too much chocolate, mince pies and sweets. Although I loved spending time with the family over the Christmas holiday, I was happy to go back to normal at the beginning of the month. Nothing like going back to routine!

If you have also enjoyed yourself over Christmas, or perhaps your New Year’s Resolution is to be healthier this year, you will be pleased to hear that GLORIOUS! has added a new fresh soup to their SkinnyLicious range: Vietnamese Supergreen soup.

If you haven’t heard of GLORIOUS! before, they have a range of soups using authentic ingredients and flavours from around the globe. I have previously tried Fragrant Thai Carrot Soup from the SkinnyLicious range and loved the combination of flavours. I also loved West African Chicken Soup – yummy!

The limited edition Vietnamese Supergreen soup is deliciously light, with only 144 calories and 2% fat per serving, which is half of the soup pot. I usually have the whole pot and couldn’t believe when I found out it was less than 290 calories for a massive pot of mouth-watering soup!

As the soup is low fat and low calorie, I teamed it up with slices of homemade wholegrain bread with dried fruit, which complemented the soup perfectly.

Vietnamese Supergreen is made with petit pois, green lentils and spinach, combined with kaffir lime leaves, ginger and lemongrass, bringing the warmth and freshness of the Vietnamese cuisine straight to your lunchtime.
