Winter Warmers: GLORIOUS! West African Chicken Soup
I enjoy soup all year round, but nothing like a comforting bowl of hot soup in a cold evening. Although we haven’t had any snow in a while, the weather has been rather cold and wet lately. While the rain is pouring outside, I have been enjoying some delicious fresh soup.
I must confess I have been making the most of the school holidays and spending as much time as possible with our family, as a result, I haven’t done much cooking. Instead I stocked up on mouth-watering fresh soups from the UK’s leading brand GLORIOUS! which can be cooked in the microwave within minutes. They are simply delicious, available in 13 global soup flavours, and you can choose from Skinnylicious, meal soup, vegetarian, vegan and gluten-free.
A few weeks ago, I shared my thoughts on Fragrant Thai Carrot Soup, which I loved, and since then I have been trying other flavours from the range, which one is nicer than the other and the exotic combination of flavours makes your travel buds travel around the world. One of my favourite soups is West African Chicken meal soup, a rich chicken soup with red peppers and warming West Africa spices, such as cumin, turmeric, cinnamon, black pepper, cayenne pepper and nutmeg, that give an exciting and unique kick to the soup – perfect to warm up in a cold day!
The mouth-watering soup combines chicken thigh for more flavour, black eye beans, pulses, butternut squash and spring onions, together with other authentic ingredients in the melting pot of bold flavours. I love the bits in the soup and, if I could change anything, it would be to have bigger pieces of chicken. Although there are lots of chicken in the soup, it would be nice to bite larger chunks. Apart from that, I cannot fault the beautiful combination of flavours and spices.
