How to Make Small Changes for a Healthier Lifestyle and Ginger & Apple Oat Muffin Recipe

A couple of weeks ago, I shared some great wellbeing tips; I asked fellow bloggers to share their best tips for maintaining their everyday wellbeing and what they do to be healthy and happy. Keeping hydrated was a high priority when trying to improve wellbeing, together with eating a balanced diet and keeping active.

Since writing the blog post, I have been trying to be healthier by making small changes to my lifestyle and I can say I feel better and happier.

Keeping hydrated

I must confess I don’t drink much water during the day. I have been keeping a water bottle close to me, as well as drinking more herbal tea throughout the day.

Eating a balanced diet

Breakfast is the most important meal of the day, it is important to start the day with a nutritious meal. I usually have a bowl of porridge or eggs for breakfast, but have been making oat muffins which are great as breakfast on the go.

My favourite combination is ginger and apple, which is sweet and spicy at the same time. The oat muffins have no sugar, flour or butter, just pure goodness from oats, apple, raisins and root ginger.

I used a bag of Twinings Freshly Picked Root Ginger tea in the recipe, which is made with ginger root and apple pieces, adding a lovely flavour to the muffins.

Ingredients
  1. 60g oats
  2. 50g raisins
  3. 1 apple, grated
  4. 1 egg
  5. 1 tsp cinnamon
  6. 1 tsp baking powder
  7. 1 teabag of Twinings Freshly Picked Root Ginger
  8. 100ml milk
Instructions
  1. Preheat the oven at 180C.
  2. In a bowl, whisk together the milk and egg. Add the oats, baking powder, cinnamon, grated apple and raisins.
  3. Open the teabag and add its content to the batter and mix well.
  4. The batter will be loose and wet. Evenly distribute the mix into muffin cases.
  5. Bake for 20-25 minutes or until muffins are golden brown.
  6. Allow to cool before serving.

The ginger and apple oat muffins are naturally sweet and perfect for breakfast or as a healthy snack throughout the day. They are also a great alternative to regular muffins.

I enjoy mine with a cup of ginger tea, killing two birds with one stone: keeping hydrated and eating healthy!

Being more active

When trying to be more active, I have walked more instead of driving to places nearby. I spent more time in the park with little man and went for a short walk during my lunch break.
