Easy and Delicious Easter Roast Dinner with Iceland

It’s been a great Easter holiday, we managed to squeeze in a few days away and also several days out in London. We have spent a lot of quality time together, eating delicious food, sharing a laugh and visiting new places.

As a busy parent, I truly believe we should make the most of our time by finding ways of cutting corners in the kitchen.

We are big fans of Iceland and their fantastic range of frozen food, which definitely helps us to save time on cooking and, as a result, spend more time playing and having fun.

We love Easter get together, but the last thing that I want is to spend the whole time in the kitchen, slaving away, while I could be socialising and enjoying the presence of our loved ones. Luckily, Iceland has a wonderful range of luxury products which are equally convenient and tasty.

Easter roast is a must in our household, followed by a mouth-watering dessert. When I found out about Luxury Rack of Lamb and Luxury Croquembouche Patisserie Kit, I couldn’t wait to try and see what our family thought of them!

The Luxury Rack of Lamb has a delicious pepper, parsley and fried shallot crust. Furthermore, it is sourced from British Red Tractor assured farms, so you know you will be feasting on 100% British lamb. It takes around 12 hours to defrost in the refrigerator, then you only need to place in the oven for around 35 to 40 minutes.

Every roast needs crispy roast potatoes. Those pre-fried, seasoned and oil glazed roast potatoes complemented our roast beautifully. They are crispy on the outside and fluffy on the inside, cooked from frozen in 35 to 40 minutes.

We were spoilt by choice when choosing side dishes to enjoy with the roast lamb. In the end, we went for cauliflower and cheese florets in a mild creamy cheese sauce which comes ready in a bag. You simply need to pop the cauliflower and broccoli cheese in an ovenproof dish and place in the oven until golden on top. It only takes 40 minutes.

Our choice of vegetables was Chantenay carrots, sugar snap peas, Romanesco and red onion with parsley butter. It can be stir fried or cooked from frozen in the microwave, in around 10 minutes.

Not only was our Easter dinner convenient and quick to make, we all enjoyed the high quality ingredients and delicious flavour of the dishes. As it is frozen, it retains more nutrients and vitamins than fresh food, since it locks in the goodness and flavours.

To finish off our Easter feast, we had the very impressive Luxury Croquembouche Patisserie Kit, which tastes as beautifully as it looks.

It comes with everything you need to impress your guests and it is easy to assemble in the golden stand provided. The tower of delicious cream filled choux pastry profiteroles is topped with a milk chocolate golden egg, drizzled with Belgian chocolate sauce and caramel sauce, sprinkled with gold coloured sugar crystals. What more could you ask for?

Our balanced and exciting Easter meal was ready to eat in 40 minutes and I love the fact everything was ready at the same time, so I didn’t need to stay in the kitchen to keep checking on it. Once the roast, potatoes and cauliflower cheese were in the oven, I set the timer for 30 minutes, then started making the vegetables. Simply as that!
