Cranberry Pomegranate Mocktail and Impressive Party Food by Iceland
We love parties and great food, so when we heard about the new luxury and award winning food from Iceland, we couldn’t wait to try it!
Christmas is exactly one month away and we can’t wait to the festive season. We are counting the days to getting together with our family and friends, while enjoying some delicious food and drinks.

While shopping at Iceland, we were spoiled by choice. There were so many delicious items to choose from, whether you prefer Asian inspired items, seafood or fruity desserts. We decided to go for a range of items, suitable for the whole family.
The Cheesy Jalapenos Wrapped in Bacon are so creamy and full of flavour. Although jalapenos can be overpowering, they were just right, not too spicy. They were filled with cheddar cheese, mozzarella cheese and soft cheese with chilli, making it a delicious snack.
The Chicken Nachos, served with salsa dip, were also a success. The delicious chicken breast pieces are coated in a nacho style breadcrumb, making them crunchy and tasty.
Another highlight was the Luxury Coconut Leaf Prawn Parcels. Not only do they look fantastic and beautifully made, they taste absolutely heavenly. The coconut leaf prawn parcels are hand finished and filled with prawns, squid, shrimp, edamame beans and sticky rice seasoned with Sake and Mirin rice wines and soy sauce.
Every meal deserves delicious desserts to finish it off in style. Your guests will certainly appreciate the amazing selection available at Iceland, including the Luxury Raspberry and Pistachio Layered Pavlova.
Although I like Christmas pudding, I usually prefer a lighter dessert made with fruit. This layered meringue dessert, with layers of sweetened lemon British whipped cream and raspberry sauce is to die for. It is beautifully decorated with Heritage raspberries and sprinkled with pistachios.
Another delicious dessert is the Luxury Sicilian Lemon Tartlets, made with all butter pastry and a Sicilian lemon filling, finished with lemon zest. Very fresh and perfect for any party!
All the dishes were a success and, needless to say, they were so easy to prepare and they were straight from the freezer. Although I love entertaining, I believe that being practical is a must. I love how convenient and tasty these party items are!
No meal is complete without refreshing drinks. As I am not drinking at the moment (until the baby is born), I thought it would be a good idea to try a new mocktail recipe. It’s such a lovely drink that we all enjoyed and I must confess that I didn’t even miss the lack of alcohol.
- 300ml cranberry juice
- 300ml pomegranate juice
- one lime
- handful of mint leaves
- lemonade to top up (around 120ml)
- ice
- pomegranate and lime slices to garnish
- In a cocktail shaker, add ice, juice from one lime, cranberry juice, pomegranate juice and mint leaves.
- Shake well until chilled and strain into a champagne flute.
- Top up with lemonade and add a few ice cubes.
- Garnish with pomegranate and lime slices.
- If you prefer, you can swap the lemonade for champagne or prosecco, making the mocktail into a cocktail.
