I am a big fan of pizzas and hot lunches, so what is better than having pizza for lunch?

The supermarket Leggera pizzas, available from the chilled aisle, is inspired by the Leggera range available at PizzaExpress restaurants. They are a healthier alternative, served with salad so you can enjoy a lighter meal, while still having pizza.
From the comfort of your own home, you can recreate the same restaurant experience while tasting the Leggera range, which uses carefully selected ingredients on a multigrain base.. At the back of the packet, it is recommended to enjoy the pizza with salad, and I was happy to oblige.
The Chicken & Vegetable Leggera is topped with tasty chunks of chicken and a mix of peppers, aubergine and semi dried tomatoes, with a delicious basil pesto. For a crispier finish, you can drizzle a little olive oil over the pizza before cooking it in the oven. It is a deliciously light pizza!
If you are vegetarian, you don’t need to worry as you can also enjoy a lighter pizza at home. The Squash, Kale and Goat’s Cheese Leggera is heavenly. The creamy goat cheese is beautifully complemented by the flavours of the butternut squash and red onion. It is seasoned with thyme and rosemary, which adds a lovely touch to the pizza.
The Leggera range contains 44% less saturated fat than the PizzaExpress Classic range. The Chicken & Vegetable contains less than 400 calories, while the Squash, Kale and Goat’s Cheese contains less than 350 calories. I love the fact they are individual pizzas, so perfect when you are after a quick and light lunch!
