Tickle Your Taste Buds with Castello Cheese Inspired Canapes

A few weeks ago, I had the pleasure to attend Castello Cheese and Wine Pairing Christmas in July. I must admit I have never tried Castello Cheese before, so I was pleased to discover it and enjoy Castello inspired canapés by chef Ronnie Murray of Hix Restaurants with festive drinks pairings from sommelier Matt Day.

Castello has a range of cheeses that taste delicious cooked, used as canapés, as well as an after dinner indulgence. At the event, I tried a range of delicious canapés, from Lyme Bay Scallops with Castello Danish Blue, potatoes and bacon, to Wild strawberry & Castello Pineapple Halo cheesecake, the recipes are simple to execute but emanate taste and sophistication.

We all love a good old cheese board during the festive season, but Castello created a selection of exciting and tasty canapés to be served at Christmas, including:

Smoked salmon on soda bread with Castello Jersey White: Toasted soda bread spread with whipped Castello Jersey White topped with a slice of Lynbrook Grove smoked salmon and pickled cucumber. Serve with Hildago La Gitana Manzanilla Sherry (Majestic).

Baked leek tart with Castello Jersey Blue: Leeks cooked in butter with the oyster mushrooms finished with nuggets of Castello Jersey Blue. Cooked in a short crust pastry case filled with a rich cheese sauce and covered in blue cheese snow. Serve with Pilton Bottle Conditioned Medium Cider (Bristol Cider Shop)

Castello Pineapple Halo & pineapple on sticks: Cubes of pineapple with Castello Pineapple Halo and poached pineapple weed. Pineapple weed is a wild foraged plant that tastes like pineapple. Serve with Pineapple Bellini.

Ground rib steak burger with Castello Danish Blue: Mini brioche bun filled with a ground rib steak patty, melted Danish blue, gherkin, red onion jam & cherry plum tomato. Served with a smoky BBQ sauce. Serve with Waitrose Smoked Cola.

The Castello Range includes: Castello Pineapple Halo, Castello Jersey White, Castello Creamy White, Castello Creamy Blue, Castello Danish Blue and Castello Danish Blue Extra Creamy. I enjoyed the cheeses that I have tried, they were tasty and full of flavour, but my favourite has to be Castello Pineapple Halo, which is an exotic and rich soft cheese coated in pineapple, papaya and almonds – Yummy!
